Bison Carne Guisada is a savory, slow-cooked stew made with tender bison meat, simmered with onions, peppers, tomatoes, and spices like cumin and chili powder. This Tex-Mex dish results in a rich, flavorful sauce and melt-in-your-mouth meat.
Bison Carne Guisada
Ingredients
2 pounds of bison stew meat
1/3 teaspoon kosher salt
1/3 teaspoon black pepper
4 Tablespoons vegetable oil
1 onion, diced
2 jalapeno peppers, seeded and diced
2 serrano peppers, seeded and diced
2 cloves garlic, minced
½ Tablespoon ground cumin
½ Tablespoon chili powder
¼ cup chopped cilantro
2 teaspoons flour
1 bay leaf
1 can of diced tomatoes
1 teaspoon beef base
1 cup water
1 can of dark Mexican beer
Method
Lightly toss the bison with the salt and pepper in a bowl.
In a large pot or Dutch oven, brown the bison on medium-high heat in 2 Tablespoons of the oil.
Remove the bison from the pot, add the remaining oil, and cook the onions, jalapenos, and serrano chilies for about 10 minutes or until the onions are translucent. Add the garlic and cook for an additional minute, or until fragrant.
Add the browned bison meat, cumin, chili powder, cilantro, bay leaf, tomatoes, water, and beer. Mix well and add a dash of salt and pepper.
Turn the heat to high and bring to a boil. Then, reduce the heat to low and simmer, uncovered, for up to 4 hours.
Taste and adjust seasonings, serve with plain rice and tortillas
