Cobre Valley Casserole

Ingredients

  • 1 pound ground beef

  • 1 celery rib, small dice

  • 1 onion, small dice

  • 2 Tablespoons taco seasoning

  • 2- 16-ounce cans of refried beans

  • 1-4 ounce can dice jalapenos

  • 1 cup shredded cheese

  • 2 green onions, sliced thin

  • 1 tomato, diced

  • 1/3 cup pitted olives, sliced

  • 1 /12 cup crushed tortilla chips


Method

  1. Preheat oven to 350 ℉

  2. Cook the ground beef with the celery and onion

  3. After the meat is cooked, add the jalapenos (juice and all), and the taco seasoning, and stir well.

  4. Add the refried beans and stir well.

  5. Add the mixture to a casserole dish, and top with the cheese, olives, tomatoes, green onions, and crushed tortilla chips

  6. Bake for 45 minutes until hot in the middle.
