Congee



Congee is a type of rice porridge popular in Asia. It's made by boiling rice in water until it's thick and creamy. It can be eaten plain or with toppings and is often eaten for breakfast or when sick.











Congee

Ingredients

  • ½ cup olive oil

  • 1 Tablespoon minced ginger

  • 2 Tablespoons minced garlic

  • 1-cup sliced mushrooms

  • ¼ cup lentils

  • ¼ cup brown rice

  • ¼ quinoa

  • ¼ cup steel cut oats

  • 5 cups water


Method

  1. In a large pot over medium high heat, add the oil and allow to get ho

  2. Add the aromatics and stir until fragrant

  3. Add the mushrooms and cook until soft and the liquid is released

  4. Add the lentils, rice, quinoa, and oats and stir into the mixture

  5. Add the water and bring to a boil

  6. Bring the pot to simmer and cover, leaving a bit of a vent for steam to escape, for about 40 minutes, stirring occasionally during that time

  7. After 40 minutes, add salt and pepper to taste, and be sure all the grains are cooked

  8. Place about a cup of the congee in a bowl


Garnish with some or all of these: cucumber, peanuts, hot sauce, sesame seeds, cilantro, sea weed or shredded carrots
