Jalapeño pepper jelly is a unique condiment that combines the vibrant heat of jalapeño peppers with a sweet, fruity jelly base. The result is a glossy, colorful spread—typically green, but sometimes red or orange depending on additional ingredients and coloring. Its texture is smooth and slightly sticky, much like traditional fruit jellies, but with flecks of jalapeño peppers suspended throughout.
Jalapeño Pepper Jelly
Ingredients
10 jalapeno peppers
1 cup white vinegar
2 ½ Tablespoons powdered pectin
4 cups sugar
Method
Cut the peppers and remove the seeds and pith. Either mince or put the peppers in a food processor to grind them up. Add the vinegar and peppers to a small stockpot, then add the pectin. Stir well and bring to a boil.
Reduce the heat to a simmer, add the sugar, and stir well.
Turn the heat back up and bring the mixture to a boil for about 5 minutes. Then let simmer for another 5 minutes.
Turn off and let cool slightly to add to jars or containers. Refrigerate uncovered for 4 to 5 hours.
Cover after it is completely cool. Keeps for approximately 4 weeks when refrigerated.
