Salmon Patties


Ingredients

  • 2/3 cup panko

  • 8 ounces cooked and flaked salmon

  • 1 Tablespoon minced parsley

  • 2 Tablespoons chopped green onion

  • 2 Tablespoons mayonnaise

  • 1 teaspoon lemon juice

  • 1 teaspoon Dijon mustard

  • ½ teaspoon Old Bay Seasoning

  • ½ teaspoon Worcestershire

  • 1 large egg

  • 1-2 Tablespoon olive oil

Method

  1. In a large bowl, add the salmon, 1/3 of the panko breadcrumbs, and the parsley, green onions, mayo, lemon juice, Dijon, Old Bay, Worcestershire, and the egg-mix well

  2. Using wet hands, form 4 patties from the salmon, and dredge them in the remaining panko breadcrumbs to cover both sides of the patties-remove to a plate

  3. In a large skillet or frying pan over medium high heat, add the oil and shallow fry the patties in the oil for about 4 minutes on each side, so the color is golden brown, and they are hot all the way through. Be sure not to crowd the pan
