Tamarind Cashew Dipping Sauce


  • 1 Tablespoon white vinegar

  • 1 teaspoon balsamic vinegar

  • ½ teaspoon tamarind concentrate

  • ½ cup honey

  • 1 Tablespoon granulated sugar

  • 1 pinch of turmeric

  • ½ cup chopped cashews

  • 2/3 cup chopped cilantro

  • 2 Tablespoons minced garlic

  • 2 green onions, sliced

  • 1 teaspoon black pepper

  • 1 teaspoon cumin

  • ¼ cup olive oil


  1. Stir together both kinds of vinegar, the tamarind paste, honey, sugar, and turmeric in a small microwave-safe bowl and microwave for about one minute, or until the sugar and tamarind paste is dissolved

  2. In a blender or food processor, puree the tamarind and vinegar mixture, the cashews, cilantro, onions, garlic, pepper, cumin, and olive oil.

  3. Pour mixture into a bowl and refrigerate. Can be kept in a sealed container for up to three weeks
