Vegetable lo mein is a popular Chinese-American dish that features stir-fried wheat noodles tossed with a colorful assortment of fresh vegetables. The noodles are typically soft and chewy, providing a satisfying base for the vibrant mix of crisp, sautéed vegetables. Common vegetables used in lo mein include bell peppers, carrots, snow peas, mushrooms, broccoli, and cabbage, though the selection can vary based on personal preference and seasonal availability.
Vegetable Lo Mein
Ingredients
8 ounces lo Mein noodles
1 Tablespoon olive oil
2 Tablespoons minced garlic
2 cups sliced mushrooms
1 red pepper julienned
1 carrot julienned
½ cup snow peas
3 cups baby spinach
For the sauce
2 Tablespoon soy sauce
2 teaspoon sugar
1 teaspoon sesame oil
1 /2 teaspoon minced ginger
½ teaspoon sriracha sauce
Method
In a small bowl, whisk together all the sauce ingredients, and set aside
Cook the noodles in a large pot of water, drain well, and set aside
Heat the olive oil in a skillet or a wok over medium-high heat. Add garlic, mushrooms, bell pepper, and carrot. Cook, stirring frequently, until tender. Add snow peas and spinach, and stir until the spinach is wilted.
Stir in the lo Mein noodles and stir to combine
Serve immediately. Makes 4 servings
