Breakfast Bruschetta

Try Breakfast Bruschetta for a delicious and easy breakfast. Toast bread, add mushrooms, green onions, Parmesan, and Pepper Jack cheese. Add eggs or bacon for a heartier dish

Breakfast Bruschetta


  • 4 slices of a Baguette

  • 1 Tablespoons butter

  • 2 eggs

  • ½ cup sliced mushrooms

  • 4 slices Pepper Jack cheese

  • ¼ cup shredded Parmesan cheese

  • 1 sliced green onion

  • Salt and pepper to taste


  1. Pre-heat the oven to 350 degrees

  2. Sauté the mushrooms in 1 Tablespoon of the butter and some salt and pepper

  3. Thinly slice the baguette in ¼ inch slices and grill on each side,

  4. Slice the pepper Jack into slices

  5. When the mushrooms are fully sautéed, scramble the eggs and cook with the mushrooms, adding salt and pepper-set aside when done

  6. Top the bruschetta pieces with 1 slice of pepper Jack cheese, place in the oven on a sheet tray until the cheese melts

  7. Pull the sheet tray out, add the egg mushroom mixture to each bruschetta, and top with the shredded Parmesan

  8. Place back into the oven until the Parmesan is melted

  9. Top with the sliced green onion
