Amba sauce is a sharp, spicy condiment from the Middle East, made with mangoes, spices, lemon juice and vinegar. It’s especially popular in Iraqi and Israeli cuisine.
Amba Sauce
Ingredients
1 Tablespoon olive oil
1 Tablespoon minced fresh garlic
1 ripe mango
¼ teaspoon cumin
¼ teaspoon cayenne pepper
¼ teaspoon fenugreek
¼ teaspoon salt
¼ cup apple cider vinegar
Juice from ½ lemon
¼ cup water
1 teaspoon Dion mustard
Method
Puree all the ingredients in a food processor.
Heat in a saucepan until thoroughly heated throughout
Cool properly and store in a sealed container in the refrigerator.
Keeps for 2 weeks.
Yields 1 cup
