Bahn Mi Tacos with Ground Pork

Ingredients

  • 1 lb ground pork

  • 4 tsp soy sauce

  • 2 tsp fish sauce

  • 2 tbsp sriracha (divided)

  • 2 tbsp of brown sugar

  • 2 carrots, julienned

  • 1 cucumber, julienned

  • 2 tsp rice wine vinegar (divided)

  • 1/2 tsp of white sugar

  • 1/2 cup of mayonnaise

  • Cilantro

  • Tortillas


Method

  1. Pickle carrots and cucumber with 1 tsp vinegar and 1/2 tsp sugar; let sit 15 minutes.

  2. Mix mayo with 1 tbsp sriracha and 1 tsp vinegar; chill.

  3. Cook pork in a skillet; add soy sauce, fish sauce, brown sugar, and 1 tbsp sriracha. Cook until caramelized.

  4. Warm tortillas.

  5. Assemble tacos: spread sriracha mayo, add pork, top with pickled veggies and cilantro.
