Bahn Mi Tacos with Ground Pork
Ingredients
1 lb ground pork
4 tsp soy sauce
2 tsp fish sauce
2 tbsp sriracha (divided)
2 tbsp of brown sugar
2 carrots, julienned
1 cucumber, julienned
2 tsp rice wine vinegar (divided)
1/2 tsp of white sugar
1/2 cup of mayonnaise

Method
Pickle carrots and cucumber with 1 tsp vinegar and 1/2 tsp sugar; let sit 15 minutes.
Mix mayo with 1 tbsp sriracha and 1 tsp vinegar; chill.
Cook pork in a skillet; add soy sauce, fish sauce, brown sugar, and 1 tbsp sriracha. Cook until caramelized.
Warm tortillas.
Assemble tacos: spread sriracha mayo, add pork, top with pickled veggies and cilantro.
Tips
