Banh Mi Tofu Tacos
Ingredients
Tofu Marinade
1 block of firm tofu, pressed and cubed
2 Tablespoons soy sauce
1 Tablespoon sesame oil
1 Tablespoon maple syrup
1 Tablespoon rice vinegar
1 garlic clove, minced
1 Tablespoon sriracha
Pickled Vegetables
1 cup carrots, cut into matchsticks
1 cucumber, cut into matchsticks
1/2 cup rice vinegar
1/2 cup water
2 Tablespoons sugar
1 Tablespoon salt
Other Ingredients
Tortillas (flour or corn)
Cilantro leaves
Jalapeño slices (optional)
Mayonnaise (optional)
Lime wedges
Method
Mix soy sauce, sesame oil, maple syrup, rice vinegar, garlic, and sriracha in a bowl. Add tofu and marinate for 30 minutes.
Heat the vinegar, water, sugar, and salt until they are dissolved. Pour over carrots and cucumbers, and let it pickle for 30 minutes.
Heat a skillet over medium heat. Cook marinated tofu for 5-7 minutes per side until golden.
Warm tortillas. Spread mayo if desired. Layer the tofu, pickled veggies, cilantro, and jalapeño.
