Beef Lombardi is a tasty casserole of ground beef, tomato sauce, and egg noodles, topped with creamy cheeses. Great for family meals or potlucks!








Beef Lombardi

Ingredients

  • 1 pound of hamburger

  • 2 cans of diced tomatoes

  • 2 teaspoons sugar

  • 1 bay leaf

  • 1 can of tomato paste

  • 8 oz egg noodles

  • 1/4 cup green onions, chopped

  • 1 cup sour cream

  • 1 cup cheddar cheese, shredded

  • 1 cup shredded Parmesan cheese

  • 1 cup Jack cheese, shredded


Method

  1. In a large skillet or pot, cook the hamburger over medium heat until it's browned. Drain any excess fat.

  2. Stir in the diced tomatoes (with their juices), sugar, bay leaf, and tomato paste. Bring the mixture to a gentle simmer, cooking for about 10 minutes to let the flavors meld.

  3. Meanwhile, cook the egg noodles according to package directions until al dente. Drain and set aside.

  4. Once the meat sauce is ready, remove the bay leaf and fold in the cooked egg noodles, green onions, and sour cream. Mix until everything is well combined.

  5. Sprinkle in the cheddar, Parmesan, and Jack cheese. Stir until the cheeses are melted and everything is creamy and combined.

  6. Serve hot, garnished with additional green onions or cheese if desired. Enjoy your hearty Beef Lombardi!
