Chicken Fried Rice


  • ¼ cup vegetable oil

  • 1 chicken breast, diced

  • 1 Tablespoon fresh ginger, minced

  • 1 clove garlic, minced

  • 2 Tablespoons soy sauce

  • 2 eggs, scrambled

  • 2 cups cooked rice

  • ½ cup peas

  • 4 scallions, sliced, divided

  • 1 Tablespoon sesame oil


  1. Add the vegetable oil to a large skillet or a wok over medium high heat

  2. When the oil is hot, add the diced chicken meat and cook until cooked through

  3. Turn the heat to medium low, and add half of the scallions, the ginger, and garlic, stir well until fragrant

  4. Scramble the eggs and add to the mixture, continuing to stir

  5. Add the cooked rice, peas, and the soy sauce, and continue to stir well

  6. Turn the heat off, spoon mixture into bowls and top with the remaining sliced scallions and sesame oil
