Chipotle Cilantro Lime Sauce
Ingredients
1 cup mayonnaise
2 tablespoons fresh lime juice (about 1 lime)
2 tablespoons chopped fresh cilantro
1-2 chipotle peppers in adobo sauce (use less for milder flavor), finely chopped
1 tablespoon adobo sauce from the chipotle can
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Method
In a medium bowl, combine mayonnaise, lime juice, chopped cilantro, chipotle peppers, adobo sauce, and minced garlic.
Mix well until all ingredients are thoroughly incorporated.
Season with salt and black pepper to taste.
Refrigerate for at least 30 minutes to allow the flavors to meld.
