Chipotle Queso Blanco Sauce


  • 1 Tablespoon butter

  • ½ medium onion, minced

  • 1 serrano pepper, minced

  • 2 chipotle peppers in adobo, minced

  • 1 clove garlic, minced

  • 1 teaspoon ground cumin

  • ½ tomato deseeded, small dice

  • 1 can of evaporated milk

  • 3 Tablespoons cornstarch

  • 3 Tablespoons water

  • 1 cup sour cream

  • 2 cups grated Jack cheese

  • ½ cup grated white cheddar

  • Salt and pepper to taste


  • In a small saucepan, melt the butter and sauté the onions, minced peppers, and tomato for about 5 minutes or until the mixture is soft

  • Add the garlic and cumin and stir well

  • Add the evaporated milk and slowly bring to a light boil

  • Add the water and the cornstarch to make a slurry and add it to the mixture

  • Stir until the mixture begins to thicken, then turn the heat to simmer

  • Add the cheese and stir until it blends and melts into the sauce. Continue doing this until all the cheese is blended.

  • Add the sour cream and stir well with a whisk.

  • Season with salt and pepper to taste

Serve hot with tortilla chips
