Cucumber Salad Sandwich

Savor the refreshing crunch of a Cucumber Salad Sandwich featuring crisp English cucumber, tangy feta, and a kick of Sriracha. Perfect for a light lunch!


Cucumber Salad Sandwich

Ingredients

  • 1 English cucumber, chopped

  • ¼ teaspoon salt

  • 2 Tablespoons Greek Yogurt

  • 2 Tablespoons crumbled feta cheese

  • 1 Tablespoon Sriracha

  • 1 Tablespoon fresh dill

  • ½ teaspoon lemon juice

  • ¼ teaspoon lemon zest

  • Salt and pepper to taste

  • Lettuce, alfalfa sprouts, or microgreens

  • 2 slices red onion

  • 2 slices whole grain bread, toasted

Method

  1. Add the ¼ teaspoon of salt and the chopped cucumbers in a bowl, stir well, and set aside for 10 minutes

  2. In a separate bowl, stir together the yogurt, feta, dill, salt and pepper, lemon juice and lemon zest

  3. Drain the cucumbers, pat dry with a paper towel, add to the yogurt mixture, and stir well.

  4. Toast the bread, top 1 slice with either the lettuce, sprouts, or microgreens; add the slices of red onion, and add a heaping spoonful of the cucumber mixture on top, add the second piece of toast to make a sandwich.
