Cucumber Salad Sandwich

Ingredients

  • 1 English cucumber, chopped

  • ¼ teaspoon salt

  • 2 Tablespoons Greek Yogurt

  • 2 Tablespoons crumbled feta cheese

  • 1 Tablespoon Sriracha

  • 1 Tablespoon fresh dill

  • ½ teaspoon lemon juice

  • ¼ teaspoon lemon zest

  • Salt and pepper to taste

  • Lettuce, alfalfa sprouts, or microgreens

  • 2 slices red onion

  • 2 slices whole grain bread, toasted


Method

  1. Add the ¼ teaspoon of salt and the chopped cucumbers in a bowl, stir well, and set aside for 10 minutes.

  2. In a separate bowl, stir together the yogurt, feta, dill, salt and pepper, lemon juice, and lemon zest.

  3. Drain the cucumbers, pat them dry with a paper towel, and add them to the yogurt mixture, stirring well.

  4. Toast the bread, top one slice with either lettuce, sprouts, or microgreens; add the slices of red onion, and then add a heaping spoonful of the cucumber mixture on top. Add the second piece of toast to make a sandwich.
