Potatoes O'Brien is a dish made by frying diced potatoes, onions, and green bell peppers. It is named after a chef from the late 19th century and is commonly served as a side dish for breakfast or brunch







Potatoes O'Brien

Ingredients

  • 2 Tablespoons butter

  • 2 Tablespoons olive oil

  • 2 large russet potatoes, medium dice

  • 2 red sweet peppers, medium dice

  • 3 orange sweet peppers, medium dice

  • 1 yellow onion, medium dice

  • 1 clove garlic, minced

  • Salt and pepper to taste


Method

  1. Dice the potatoes and put them in a bowl

  2. Dice the onions and peppers and place them in a bowl separate from the potatoes

  3. Mince the garlic and set aside

  4. In a large pan over medium heat, add the butter and olive oil

  5. Add the potatoes, salt, and pepper, and stir well

  6. Cover potatoes and let cook until soft and start turning color to a light brown

  7. Add the pepper and onions, stir well, cover, and cook for about 10 minutes.

  8. Add the garlic, salt, and pepper, then stir and cook for an additional 10 minutes without the lid.
