Sardine Salad Sandwich

Ingredients

  • 2 tins sardines

  • 1 Tablespoon mayo

  • 1 Tablespoon Dijon mustard

  • ¼ cup thinly sliced scallions

  • 1 rib celery-small dice

  • 1 Tablespoon drained capers

  • Zest of one lemon

  • 1 Tablespoon lemon juice

  • 2 Tablespoons chopped parsley

  • 4 slices of toast

Method

  1. Drain the sardines and the capers and add to a large bowl

  2. Cut celery, scallions and parsley and add to bowl

  3. Zest the lemon and add the zest to the bowl

  4. Add the rest of the ingredients and mix with a fork until well combined- smashing the sardines as you go

  5. Toast the bread and enjoy your sandwiches as is or with your favorite add-ons.
