Spicy Ground Pork and Zucchini Stir Fry

Try this spicy ground pork and zucchini stir-fry for a quick and healthy dinner. The ground pork, fresh zucchini, and flavorful spices make a delicious combination. Serve with rice or noodles for a satisfying meal.


Spicy Ground Pork and Zucchini Stir Fry

Ingredients

  • 2 tablespoons vegetable oil, divided

  • 1 Tablespoon minced ginger

  • 1 Tablespoon minced garlic

  • 1 Tablespoon red chili flakes

  • 1 pound zucchini, large dice

  • 1 pound ground pork

  • 1 can water chestnuts

  • 3 Tablespoons soy sauce

  • Salt and black pepper

Method

  1. Add half the vegetable oil to a large skillet or wok over medium-high heat. Add the ginger, garlic, and pepper flakes and stir until aromatic.

  2. Add the diced zucchini and stir well until the zucchini softens. Remove from the wok/skillet and place on a paper towel-lined plate.

  3. Add the ground pork to the wok and the remaining oil and cook the pork until it is crumbled and cooked throughout. Season with salt and pepper

  4. Add the soy sauce and the zucchini back into the wok/skillet and stir fry until heated all the way through

  5. Drizzle with sesame oil, top with sliced scallions, and serve with rice or noodles
