Spicy Ground Pork and Zucchini Stir Fry

Spicy Ground Pork and Zucchini Stir Fry

Ingredients

  • 2 tablespoons vegetable oil, divided

  • 1 Tablespoon minced ginger

  • 1 Tablespoon minced garlic

  • 1 Tablespoon red chili flakes

  • 1 pound zucchini, large dice

  • 1 pound ground pork

  • 1 can of water chestnuts

  • 3 Tablespoons soy sauce

  • Salt and black pepper

Method

  1. Add half the vegetable oil to a large skillet or wok over medium-high heat. Add the ginger, garlic, and pepper flakes and stir until aromatic.

  2. Add the diced zucchini and stir well until the zucchini softens. Remove the food from the wok or skillet and place it on a paper towel-lined plate.

  3. Add the ground pork to the wok along with the remaining oil and cook until the pork is crumbled and cooked through. Season with salt and pepper

  4. Add the soy sauce and the zucchini back into the wok/skillet and stir-fry until heated all the way through

  5. Drizzle with sesame oil, top with sliced scallions, and serve with rice or noodles.
