Sweet Potato Hummus


• 1 large, sweet potato-cooked and peeled

• 4 ounces fire roasted red pepper

• 3 Tablespoons lemon juice

• 1 teaspoon fresh minced garlic

• ½ teaspoon cumin

• Couple dashes of hot sauce

• Chopped fresh parsley for garnish


1. Cook the sweet potato in the oven or microwave, let cool

2. Peel of the skin and cut into quarters

3. Place the ingredients into a food processor or blender

4. Blend the mixture well, into a puree

5. Place ingredients in the refrigerator to cool thoroughly

6. Serve cold with crackers or crudité.

Makes about 2 cups
