Angel Hair Pasta with Garlic and Oil
Ingredients
9 ounces of angel hair pasta
½ cup pasta water
¼ cup avocado oil
4 garlic cloves, sliced
½ teaspoon crushed red pepper flakes
½ teaspoon kosher salt
½ teaspoon ground black pepper
1 teaspoon fresh lemon juice
1 teaspoon lemon zest
½ cup chopped fresh parsley
Freshly grated Parmesan at plating
Method
Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente. Once cooked, reserve ½ cup of the pasta water before draining it.
Warm the avocado oil over medium heat in a large skillet. Add the sliced garlic and sauté for 1-2 minutes, or until fragrant and lightly golden. Be careful not to let it burn.
Add the cooked angel hair pasta directly to the skillet with the garlic oil. Toss to combine, ensuring the pasta is well-coated with the oil.
Pour in the reserved pasta water, followed by the crushed red pepper flakes, kosher salt, black pepper, lemon juice, and lemon zest. Toss everything together until the pasta is evenly coated with the sauce.
Stir in the chopped fresh parsley.
Plate the pasta and top with freshly grated Parmesan cheese.
