Beans-and-Greens Tacos with Goat Cheese
Ingredients
3 tablespoons extra-virgin olive oil
1 red onion, julienned
3 garlic cloves, thinly sliced
1 pound collard greens,
1 can canned cannellini beans, drained and rinsed
1/2 cup of vegetable stock
Pinch of salt and freshly ground pepper
1 package of flour tortillas (any size)
1/3 cup soft goat cheese, crumbled
Cilantro sprigs, for garnish
Method
Remove the stems and chop the collard greens into bite size pieces
Blanch the collard greens for about 5 minutes in boiling water to soften them up, drain and set aside
Heat the olive oil in a large skillet over medium heat.
Cook the onions and the softened collards until soft, about 6 -10 minutes.
Add the garlic and cook for 1 minute.
Stir in the cannellini beans and stock.
Cook until the greens are wilted and the beans are heated through, and most of the braising liquid is reduced, about 5-7 minutes.
Season with salt and pepper.
Warm the tortillas.
Fill each tortilla with the beans-and-greens mixture.
Top with crumbled goat cheese and cilantro, then serve.
