Breakfast Quesadilla

A breakfast quesadilla is a delicious fusion of Mexican and American cuisines, perfect for a hearty breakfast or brunch. It's filled with scrambled eggs, bacon, cheese, and veggies, all wrapped up in a warm tortilla.
Breakfast Quesadilla
Ingredients
1 cup cheddar cheese
1 large 12-inch flour tortilla
1-pound spicy sausage
2 Jumbo eggs
2 Tablespoons vegetable oil
Method
Cook the sausage until it is fully cooked and crumbled well. Set aside
After the sausage is fully cooked, cook eggs in 1 Tablespoon of the oil until fluffy.
In a large saucepan, heat the remaining oil over medium-high heat. Use the tortilla to spread the oil evenly around the pan. Place the cheese on top of the tortilla and let it melt. Turn off the heat.
Add the sausage and the egg to half of the tortilla and fold it over. Slide the tortilla onto a cutting board and cut it into diagonal pieces, similar to a pizza.
Add your favorite condiments to serve with.
Serves 1 per tortilla. Makes three servings
