Brie and Blackberry Omelet

To make a Brie and Blackberry Omelet, whisk together eggs, milk, and seasoning. Pour into a hot, buttered skillet and add brie cheese and fresh blackberries. Fold the other half over and cook until the cheese is melted and the eggs are set. Serve hot and enjoy!
Brie and Blackberry Omelet
Ingredients
2 medium eggs
1 teaspoon olive oil
1/3-pint fresh blackberries
7 ounces of Brie cheese
2 teaspoons honey
Method
Cut the blackberries crosswise and set them aside in a bowl, out of the way, in your mise en place.
Either slice the cheese thinly or use a microplane to grate it; set this aside in your mise as well.
Break two eggs in a bowl and whisk until well beaten.
Heat the olive oil in a skillet over medium-high heat.
When the pan is well coated with olive oil and hot, pour the egg mixture into the pan and gently move the outside into the middle of the pan until the egg is mostly set on one side.
Either with a spatula or with extraordinary talent, flip the egg mixture over, turn off the heat, and add the cheese and blueberries.
Turn the omelet onto a plate and drizzle honey over it.
Serve with fresh fruit and a small, toasted baguette.
