Buffalo Chicken Soup
Ingredients
2 ribs of celery
2 carrots
1 onion
4 cooked chicken breasts
1 Tablespoon olive oil
1 Tablespoon butter
1 Tablespoon flour
1-ounce dry ranch seasoning mix
4 cups chicken broth
¼ cup hot sauce
8 ounces of cream cheese, softened
Method
Dice the mirepoix (carrots, celery, and onions) and set it aside in a bowl.
Dice the cooked chicken breast and place it in a bowl.
Melt the butter and oil in a large pot over medium-high heat.
Add the mirepoix to the butter and oil, and sweat until the carrots are tender and soft.
Add the flour and ranch dressing packet into the mirepoix and butter mixture to form a roux.
Continue cooking the roux until it reaches a consistency similar to peanut butter and turns a slightly darker color.
Add the chicken broth and stir until well incorporated.
Add the diced chicken and the hot sauce while stirring.
Add the softened cream cheese little by little while stirring, to avoid clumps.
Let the soup simmer for 10 minutes.
Serve topped with blue cheese crumbles and sliced green onions
