Caprese Chicken

This recipe for caprese chicken is a crowd-pleaser! Boneless chicken breasts are topped with mozzarella cheese, vine-ripened tomatoes, and fresh basil leaves, then baked to perfection with balsamic vinegar and olive oil.


  • 4 boneless skinless chicken breasts

  • 1 Tablespoon olive oil

  • 1 Tablespoon butter

  • 1 small jar of pesto

  • 1 pound block of Mozzarella Cheese

  • 2 large tomatoes

  • 1 cup basil leaves

  • Salt and pepper as needed


  • Season both sides of the chicken breasts with salt and pepper. Heat a large skillet over medium-high heat; add the olive oil and butter. Add the chicken breasts to the pan once the butter has melted into the olive oil.

  • Cook on each side until lightly browned and quickly release from the pan, about 3-4 minutes each.

  • Top each chicken with two tablespoons of pesto per chicken breast. Top each chicken breast with sliced mozzarella and a few tomato slices.

  • Cover and cook until the cheese is melted and the chicken reaches an internal temperature of 165 degrees

  • Plate the chicken Caprese with pasta or risotto and garnish with fresh basil and a drizzle of balsamic glaze.
