This recipe for caprese chicken is a crowd-pleaser! Boneless chicken breasts are topped with mozzarella cheese, vine-ripened tomatoes, and fresh basil leaves, then baked to perfection with balsamic vinegar and olive oil.
Ingredients
4 boneless skinless chicken breasts
1 Tablespoon olive oil
1 Tablespoon butter
1 small jar of pesto
1 pound block of Mozzarella Cheese
2 large tomatoes
1 cup basil leaves
Salt and pepper as needed
Method
Season both sides of the chicken breasts with salt and pepper. Heat a large skillet over medium-high heat; add the olive oil and butter. Add the chicken breasts to the pan once the butter has melted into the olive oil.
Cook on each side until lightly browned and quickly release from the pan, about 3-4 minutes each.
Top each chicken with two tablespoons of pesto per chicken breast. Top each chicken breast with sliced mozzarella and a few tomato slices.
Cover and cook until the cheese is melted and the chicken reaches an internal temperature of 165 degrees
Plate the chicken Caprese with pasta or risotto and garnish with fresh basil and a drizzle of balsamic glaze.
