Cilantro Lime Chicken
Ingredients
¼ cup olive oil
1 Tablespoon fresh garlic, minced
1 teaspoon cumin
¼ teaspoon kosher salt
¼ teaspoon black pepper
2 limes
1 bunch cilantro
6 boneless skinless chicken thighs
Method
Zest a lime to obtain one teaspoon of zest, and then squeeze out the juice to obtain 3 Tablespoons of juice. Cut another lime to get more juice if needed.
Roughly chop half of the cilantro
Whisk together the olive oil, minced garlic, cumin, ¼ teaspoon each of salt and pepper, lime zest, lime juice, and cilantro in a small bowl. This is the marinade for the chicken.
Place the chicken thighs in a small shallow dish or a large Ziplock bag. Add the marinade and thoroughly coat the chicken. Allow to marinate (refrigerated) for 1 hour up to 8 hours, depending on your flavor preference and time.
When ready, cook the chicken in a large skillet over medium-high heat or grill over medium heat until the internal temperature reaches 165°F.
Serve with rice, tortillas, and your favorite fajita toppings.
