Cilantro Lime Chicken


  • ¼ cup olive oil

  • 1 Tablespoon fresh garlic, minced

  • 1 teaspoon cumin

  • ¼ teaspoon kosher salt

  • ¼ teaspoon black pepper

  • 2 limes

  • 1 bunch cilantro

  • 6 boneless skinless chicken thighs


  1. Zest a lime to get 1 teaspoon of zest and squeeze out the juice to get 3 Tablespoons of the juice.  Cut another lime to get more juice if needed.

  2. Roughly chop half of the cilantro

  3. Whisk together the olive oil, minced garlic, cumin, ¼ teaspoon each of salt and pepper, lime zest, lime juice, and cilantro in a small bowl.  This is the marinade for the chicken.

  4. Place the chicken thighs in a small shallow dish or a large Ziplock bag.  Add the marinade and fully coat the chicken.  Allow to marinate (refrigerated) for 1 hour up to 8 hours, depending on your flavor preference and time.

  5. When ready, cook the chicken in a large skillet over medium-high heat, or grill over flame at medium heat until internal temperature reaches 165 F.

Serve with rice, tortillas, and your favorite fajita toppings
