Oven Roasted Chicken Shawarma
Ingredients
2 pounds chicken thighs
½ cup olive oil
Juice of 1 lemon
4 garlic cloves, minced
¼ teaspoon black pepper
¼ teaspoon kosher salt
¼ teaspoon cumin
½ teaspoon paprika
½ teaspoon turmeric
¼ teaspoon red pepper flakes
Method
Cut the chicken into 1-inch pieces and place in a gallon Ziplock bag
Make the marinade by combining olive oil, fresh lemon juice, garlic, and spices
Marinate overnight for best results, but for at least 2 hours for the flavors to transfer
Preheat oven to 425 degrees F
Add the marinated chicken to a sheet pan and bake for 25 minutes
Serve with pita bread, hummus, cucumbers, and tomatoes.
