As the chicken cooks and becomes tender and flavorful, it's shaved off and typically served in a warm pita or flatbread, accompanied by fresh vegetables and creamy sauces like garlic sauce or tahini. Oven Roasted Chicken Shawarma

Ingredients

  • 2 pounds chicken thighs

  • ½ cup olive oil

  • Juice of 1 lemon

  • 4 garlic cloves, minced

  • ¼ teaspoon black pepper

  • ¼ teaspoon kosher salt

  • ¼ teaspoon cumin

  • ½ teaspoon paprika

  • ½ teaspoon turmeric

  • ¼ teaspoon red pepper flakes



Method

  1. Cut the chicken into 1-inch pieces and place in a gallon Ziplock bag

  2. Make the marinade by combining olive oil, fresh lemon juice, garlic, and spices

  3. Marinate overnight for best results, but for at least 2 hours for the flavors to transfer

  4. Preheat oven to 425 degrees F

  5. Add the marinated chicken to a sheet pan and bake for 25 minutes

Serve with pita bread, hummus, cucumbers, and tomatoes.
