Cheesy Kimchi Tater Tot Casserole
Ingredients
1-pound package of tater tots
4 Tablespoons butter
1 ½ cup chopped cabbage kimchi
6 Tablespoons all-purpose flour
2 cups milk
1 cup shredded pepper Jack cheese
1 jalapeno, thinly sliced
Chopped fresh parsley
Method
Preheat oven to 450 degrees F. Cook Tater Tots according to package directions
Blend the kimchi in a blender and set aside.
In a medium saucepan, melt the butter. Add the kimchi and flour, and cook over medium heat, stirring, until the kimchi is coated with the flour. Stir in the milk and bring to a simmer. Cook on simmer until thickened, and season with salt and pepper.
Divide the cooked tater tots among one large or three smaller oven-proof dishes. Spoon the kimchi gravy evenly over the tots, and top with cheese.
Bake until the cheese melts. About 5 minutes
Top with sliced jalapenos and chopped parsley.
