Noodles Romanov is a creamy pasta dish inspired by Russian cuisine but developed in American kitchens. It features wide egg noodles in a rich sauce of sour cream, cream cheese, butter, and often Parmesan or Romano cheese, with onion and garlic for extra depth. Some versions include beef or mushrooms, while fresh herbs like chives or parsley are typical finishing touches.

Ingredients
½ pound egg noodles
1 onion, diced
¼ pound butter
½ cup flour
1 clove garlic
3 cups milk
½ cup cottage cheese
½ cup sour cream
½ cup parmesan
½ cup cheddar
1 Tablespoon paprika
Method
Cook noodles and set aside.
In a skillet, melt butter over medium, sauté onion until soft, add garlic for 1 minute.
Stir in flour and cook 2-3 minutes.
Gradually whisk in milk; cook until thickened.
Lower heat, add cottage cheese, sour cream, parmesan, cheddar, paprika, salt, and pepper. Stir well.
Mix in noodles to coat evenly.
Optional: Transfer to a baking dish, top with extra cheese, and bake at 350°F for 20-25 minutes until golden.
Serving
Serve warm, paired with a salad or bread.
