2 chicken breast, sliced thin
1 bunch of asparagus
2 cloves of garlic, minced
1 Tablespoon ginger, grated
2 Tablespoons soy sauce
1 Tablespoon oyster sauce
5 Tablespoons cornstarch-divided
3 teaspoons of water
3 Tablespoons vegetable oil
Salt and pepper to taste
Cut the chicken breasts into thin strips. Season the chicken with salt and pepper and dust with 2 Tablespoons of the cornstarch
Heat one tablespoon of vegetable oil in a large skillet or wok over medium-high heat and add the seasoned chicken to the skillet. Cook until it turns golden brown and is cooked through. This should take about 4-5 minutes.
Remove the cooked chicken from the skillet and set it aside.
Add another tablespoon of vegetable oil in the same skillet and heat it over medium heat.
Add minced garlic and grated ginger to the skillet, stirring constantly for about 30 seconds until fragrant.
Add the asparagus to the skillet and sauté for about 3-4 minutes until it becomes crisp-tender. Be sure to stir occasionally.
Return the cooked chicken to the skillet with asparagus.
In a small bowl, whisk together soy sauce, oyster sauce, and cornstarch (if desired) until well combined.
Pour the sauce mixture over the chicken and asparagus, stirring continuously to coat everything evenly.
Continue cooking for another 1-2 minutes until the sauce thickens slightly.
