Confetti Chicken


  • 1-pound chicken cutlets

  • 1 tablespoon chili seasoning

  • 1-can of cream chicken soup

  • ½ cup skim milk

  • 1 red sweet pepper, diced

  • 1 yellow pepper, diced

  • 1 jalapeno pepper, diced

  • 1 cup frozen corn

  • 1 cup cheddar cheese

  • sliced green onions

  • salt and pepper as needed


  1. Pre-heat oven to 375 degree F

  2. Place the chicken cutlets in a well-greased baking or casserole dish and cover with chili seasoning and salt and pepper

  3. In a small bowl, add the soup and the milk and mix well, then pour over the chicken

  4. Add the diced peppers, jalapenos, and corn

  5. Bake uncovered at 375 degree F for about 35 minutes until it begins to bubble

  6. Remove from oven and top with cheddar cheese and sliced green onions, place back in the oven and completely melt the cheese

  7. Remove from oven and serve hot with cornbread
