Confetti Chicken


  • 1-pound chicken cutlets

  • 1 tablespoon chili seasoning

  • 1-can of cream chicken soup

  • ½ cup skim milk

  • 1 red sweet pepper, diced

  • 1 yellow pepper, diced

  • 1 jalapeno pepper, diced

  • 1 cup frozen corn

  • 1 cup cheddar cheese

  • sliced green onions

  • salt and pepper as needed


  1. Pre-heat oven to 375 degrees F

  2. Place the chicken cutlets in a well-greased baking or casserole dish and cover with chili seasoning, salt, and pepper.

  3. Add the soup and milk to a small bowl, mix well, then pour over the chicken.

  4. Add the diced peppers, jalapenos, and corn.

  5. Bake uncovered at 375 degrees F for about 35 minutes until it begins to bubble.

  6. Remove from oven and top with cheddar cheese and sliced green onions; place back in the oven and completely melt the cheese.

  7. Remove from oven and serve hot with cornbread.
