Creamy Chicken with Artichokes


  • 1 Tablespoon olive oil

  • 1-pound diced chicken

  • 1 can artichoke hearts

  • 1 cup sliced mushrooms

  • ½ onion, diced

  • 1 clove garlic, minced

  • 1-pint heavy cream

  • 1 teaspoon chicken base

  • Salt and pepper as needed


  1. Use the rendered fat from the chicken or the olive oil to sauté the chicken, artichokes, mushrooms, and onion. Season with salt and pepper

  2. Add the garlic and sauté until fragrant

  3. Add the heavy cream and the chicken base and whisk the mixture to break up the artichokes and the chicken base.

  4. Turn heat down and let the cream reduce to thicken sauce

  5. Season to taste with the salt and pepper

Serve with noodles or over rice
