A garbage omelet is a filling dish made with leftover ingredients. Mix beaten eggs with meats like bacon or ham, and vegetables such as peppers and onions. Cook until fluffy and top with cheese. Serve warm, and enjoy a tasty meal while reducing food waste
Garbage Omelet
Ingredients
6 eggs
3 strips of bacon. diced
1/2 cup diced ham
3 small baby peppers, diced
½ onion, diced
½ cup sliced mushrooms
1/2 russet potato, cooked and diced
1 cup shredded cheddar cheese
Salt and pepper to taste
Olive oil or butter (for cooking)
Method
Dice the bacon and ham into small pieces.
Chop the baby peppers, onion, and mushrooms.
Peel and dice the cooked russet potato into small cubes.
Add the diced bacon to the skillet. Cook until the bacon is crispy, then add the onion, mushrooms, and baby peppers. Cook for an additional 5-7 minutes until the vegetables have softened.
In a bowl, whisk the eggs and season with salt and pepper.
Pour the whisked eggs over the cooked mixture in the skillet. Gently stir everything together, allowing the eggs to coat the other ingredients evenly.
Once the eggs begin to set, sprinkle the shredded cheddar cheese on top. Cover the skillet with a lid and let it cook for a few more minutes until the eggs are set and the cheese is melted.
Carefully slide the omelet onto a plate. You can fold it in half or leave it flat. Cut into wedges and enjoy your hearty garbage omelet!
