Taco Omelet


Ingredients




  • 1-pound ground beef

  • 1-can refried beans

  • ¼ cup of water

  • 1 Tablespoon taco seasoning

  • 2-eggs

  • 1 Tablespoon vegetable oil or butter

  • 1 cup Cheddar cheese

  • Assorted toppings of your choice: shredded lettuce, salsa, sour cream, chips, guacamole, Pico de Gallo, hot sauce, olives, tomatoes, cilantro etc.

Method

  1. In a large skillet over medium heat, cook and drain the ground beef

  2. Add the can of refried beans to the cooked meat, add the water and cover for about 5 minutes, or until beans soften up enough to mix with the meat

  3. Add the taco seasoning and mix well. Cover and set aside

  4. Crack the eggs in a bowl and scramble

  5. Add the vegetable oil to a small skillet on medium heat, and add the eggs to make an omelet

  6. When the omelet is done. Turn off the heat, and add ½ the cheese and a ¼ cup of the meat filling, close the omelet and top with the remaining cheese

  7. Top with your favorite additions listed above
