Taco Omelet

Ingredients
1-pound ground beef
1-can refried beans
¼ cup of water
1 Tablespoon taco seasoning
2-eggs
1 Tablespoon vegetable oil or butter
1 cup Cheddar cheese
Assorted toppings of your choice: shredded lettuce, salsa, sour cream, chips, guacamole, Pico de Gallo, hot sauce, olives, tomatoes, cilantro etc.
Method
In a large skillet over medium heat, cook and drain the ground beef
Add the can of refried beans to the cooked meat, add the water and cover for about 5 minutes, or until beans soften up enough to mix with the meat
Add the taco seasoning and mix well. Cover and set aside
Crack the eggs in a bowl and scramble
Add the vegetable oil to a small skillet on medium heat, and add the eggs to make an omelet
When the omelet is done. Turn off the heat, and add ½ the cheese and a ¼ cup of the meat filling, close the omelet and top with the remaining cheese
