This Bacon, Jalapeno, and Cream Cheese Omelet is a great way to start your morning. With crispy bacon, the zing of fresh jalapeno, and the luscious creaminess of cream cheese. Delicious!
Bacon, Jalapeno, and Cream Cheese Omelet
Ingredients
5 strips of bacon
1 large jalapeno
2 large eggs
6 ounces cream cheese, softened
Salt and pepper (optional)
Butter or oil, for the pan
Method
Cook bacon in a skillet until crisp; drain and chop.
Dice jalapeno (remove seeds for less heat).
Mix half the jalapeno with cream cheese.
Whisk eggs with a pinch of salt and pepper.
Pour eggs into a greased non-stick pan over medium heat; let set slightly.
Spread jalapeno cream cheese over half of the eggs. Top with bacon and remaining jalapeno.
Fold omelet in half and cook until eggs are just set and cream cheese is warmed through.
Serve hot
