Spinach and Goat Cheese Omelet

Spinach and Goat Cheese Omelet

Ingredients

  • 3 eggs

  • ½ cup of cooked spinach

  • 1 diced tomato

  • ½ cup of crumbled goat cheese

  • 1 tablespoon of olive oil





Method

  1. First, beat the eggs in a bowl until they are well mixed. Heat the olive oil in a non-stick skillet over medium heat.

  2. Next, pour the beaten eggs into the skillet. Allow the eggs to cook until they are set on the bottom, then use a spatula to gently lift the edges of the omelet and allow the uncooked eggs to flow underneath. Continue cooking until the eggs are almost set on top.

  3. Sprinkle the crumbled goat cheese over one half of the omelet, add the spinach and the diced tomatoes, then use the spatula to fold the other half of the omelet over the cheese. Cook for another minute or two until the cheese is melted and the eggs are fully cooked.

Slide the omelet onto a plate and serve hot with toast and hashbrowns
