This gourmet grilled cheese sandwich is a decadent twist on the classic grilled cheese, featuring French bread, creamy cheeses, fresh tomato, and smoky bacon.
Gourmet Grilled Cheese Sandwich with Gouda, Havarti, Tomato & Bacon
Ingredients
8 slices French bread (cut about ½-inch thick)
4 ounces Gouda cheese, sliced or shredded
4 ounces Havarti cheese, sliced or shredded
½ cup mayonnaise
1 large tomato, sliced thinly
8 slices cooked bacon
Butter, for spreading (optional)
Method
Preheat a large skillet or griddle over medium heat.
Wash and thinly slice the tomato.
If you haven’t already, cook the bacon until crispy and drain on paper towels.
Slice or shred the Gouda and Havarti cheeses for easy melting.
Spread a generous layer of mayonnaise on one side of each slice of French bread. This will ensure a golden, flavorful crust.
On the uncoated side of 4 bread slices, layer Havarti and Gouda cheeses, alternating for even coverage.
Place 2 slices of bacon on top of the cheese for each sandwich.
Add a few slices of fresh tomato.
Top with the remaining cheese (using both Gouda and Havarti), then close each sandwich with another slice of bread, mayo-side out.
Place the sandwiches, mayo-side down, on the preheated skillet. Optionally, add a little butter for extra crispiness.
Cook until the bottom is golden brown and crispy, about 3–4 minutes. Press gently with a spatula to help the cheese melt.
Flip each sandwich and cook the other side until equally golden and the cheeses are melted, another 3–4 minutes. Adjust the heat as needed to avoid burning.
Remove the grilled cheese sandwiches from the skillet and let them rest for a minute before slicing—this keeps the cheeses from oozing out too quickly.
Slice each sandwich in half and serve warm, perhaps with a simple green salad or a bowl of tomato soup.
