Lettuce Wraps with Ground Beef and Peppers

Ingredients

  • 1 lb ground beef

  • ½ red pepper, diced

  • ½ orange pepper, diced

  • ½ yellow pepper, diced

  • ½ onion, diced

  • 1 TBL grated ginger

  • 2 cloves garlic, minced

  • 2 TBL soy sauce

  • 1 TBL rice wine vinegar

  • 2 Tsp sesame oil

  • Cornstarch (to thicken)

  • Brown rice, cooked

  • 3 Bibb lettuce leaves


Method

  1. Cook brown rice and set aside.

  2. Sauté ground beef in a skillet until browned. Drain excess fat.

  3. Add onion and peppers; cook until slightly tender.

  4. Mix in ginger and garlic; cook until fragrant.

  5. Stir in soy sauce, vinegar, sesame oil. Thicken with cornstarch slurry if needed.

  6. Spoon rice and beef mixture into lettuce leaves. Wrap and enjoy.
