Spicy Thai Basil Tofu

Spicy Thai Basil Tofu

Ingredients

Tofu

  • 1 block of extra firm tofu

For the Sauce

  • ¼ cup vegetable broth

  • 4 Tablespoons fish sauce

  • 1 Tablespoon soy sauce

  • 1 teaspoon cornstarch

To Cook

  • 3 Tablespoons olive oil

  • 1 small red onion, diced

  • 3 cloves garlic, minced

  • 1 Jalapeno, small dice

  • 4 birds' eye chilies

  • 1 small red bell pepper, seeded and diced

  • 1 packed cup of fresh basil

Method

  1. Press the tofu for 10 minutes and drain any excess liquid. Afterward, you can crumble or dice the tofu and add it to a small bowl.

  2. Mix all the sauce ingredients in a small bowl and set aside.

  3. Heat a large non-stick skillet or a wok over medium-high heat. Add the oil, and once hot, add the red onion and sauté until translucent.  Add garlic, jalapeno, and red pepper. Lower the heat to medium and sauté for 3 minutes or until the red pepper is cooked. Increase the heat, add the tofu, and cook until the tofu browns a bit, stirring as needed, for about 10 minutes.

  4. Stir the sauce and add to the tofu; lower the heat and stir well. Add the fresh basil, mix well, and cook for about 2 minutes until the basil is wilted. Adjust the seasonings with more soy sauce.

Serve over noodles or rice.
