Spicy Thai Basil Tofu
Ingredients
Tofu
1 block of extra-firm tofu
For the Sauce
¼ cup vegetable broth
4 Tablespoons fish sauce
1 Tablespoon soy sauce
1 teaspoon cornstarch
To Cook
3 Tablespoons olive oil
1 small red onion, diced
3 cloves garlic, minced
1 Jalapeno, small dice
4 birds' eye chilies
1 small red bell pepper, seeded and diced
1 packed cup of fresh basil
Method
Press the tofu for 10 minutes and drain any excess liquid. Afterward, you can crumble or dice the tofu and add it to a small bowl.
Mix all the sauce ingredients in a small bowl and set aside.
Heat a large non-stick skillet or a wok over medium-high heat. Add the oil, and once hot, add the red onion and sauté until translucent. Add garlic, jalapeno, and red pepper. Lower the heat to medium and sauté for 3 minutes, or until the red pepper is tender and cooked through. Increase the heat, add the tofu, and cook until it browns slightly, stirring as needed, for about 10 minutes.
Stir the sauce and add to the tofu; lower the heat and stir well. Add the fresh basil, mix well, and cook for about 2 minutes until the basil is wilted. Adjust the seasonings with more soy sauce.
Serve over noodles or rice.
