Turkish Menemen

Turkish Menemen is a traditional breakfast dish made with eggs, tomatoes, green peppers, and a blend of spices. The ingredients are sautéed together in olive oil or butter until they form a flavorful, slightly runny mixture. Menemen is typically served hot in the pan it’s cooked in, accompanied by crusty bread for dipping, making it a comforting and satisfying meal enjoyed throughout Turkey.
Menemen: Turkish Scrambled Eggs
Ingredients
2 Tablespoons olive oil
1 onion, medium dice
1 green bell pepper, medium dice
2 tomatoes, medium dice
3 Tablespoons Ketchup
1 teaspoon dried oregano
¼ teaspoon kosher salt
¼ teaspoon black pepper
1 teaspoon sumac powder
4 large eggs
chili flakes
chopped parsley
crusty bread
Method
In a skillet, heat the olive oil over medium heat. Add the onions and peppers and cook for about 5 minutes or until the vegetables are soft, seasoning with salt and pepper.
Stir in the tomatoes and cook until the juice is almost gone and the tomatoes begin to soften.
Add the ketchup, oregano, a little more salt and pepper, and the sumac powder, and stir until the mixture becomes a dark red color.
Turn the heat to medium-low, scramble the eggs, and cook in the pan with the vegetables, gently stirring until the eggs are cooked but still soft.
Plate the Menemen, add the parsley and red chili flakes, and enjoy with thick-sliced, crusty bread of your choice.
