Parmesan peppers are an easy and flavorful dish. Roasted peppers are mixed with garlic, thyme, olive oil, Parmesan cheese, and lemon juice for a tasty side.
Parmesan Peppers
Ingredients
6 peppers (any kind you like)
1 clove garlic
8 thyme sprigs
1 tablespoon olive oil
¼ cup shredded Parmesan cheese
Juice of ½ lemon
Salt and pepper, to taste
Method
Preheat oven to 400°F (200°C).
Wash and slice peppers. Remove seeds and stems.
Peel and slice the garlic.
Pull leaves off half the thyme sprigs.
Put peppers in a bowl. Add olive oil, garlic, thyme leaves, salt, and pepper. Mix well.
Spread peppers on a baking sheet. Add the rest of the thyme sprigs on top.
Roast for 25-30 minutes, turning halfway. Peppers should be soft and a little browned.
Put roasted peppers on a plate. Sprinkle with Parmesan cheese and squeeze lemon juice over them.
Serve warm. Enjoy!

Try different peppers for new flavors.
Use other herbs like rosemary or oregano if you don’t have thyme.
You can grill the peppers instead of roasting them.
