Pastitsio is a beloved traditional Greek dish that resembles a baked pasta casserole. It is renowned for its hearty layers and comforting flavors, making it a staple at family gatherings and festive occasions in Greece and among Greek communities worldwide.

Ingredients
¼ pound butter
⅓ cup flour
3 cups milk
Pasta (penne, ziti, or Greek pastitsio noodles)
2 pounds ground beef
1 onion, diced
1 clove garlic, minced
3 eggs
½ cup cinnamon (or less, to taste)
1 can diced tomatoes (14–15 oz)
1 cup parmesan cheese, divided
Method
Sauté onion in butter until translucent, add garlic, then ground beef. Brown meat, then stir in tomatoes and cinnamon; simmer 15–20 minutes.
Cook pasta until al dente, drain.
Melt butter, whisk in flour, then add milk gradually to make a thick béchamel. Cool slightly, whisk 2 eggs and half the cheese.
Preheat oven to 350°F (175°C). Layer half the pasta, meat sauce, remaining pasta, béchamel. Brush with remaining egg (optional), sprinkle rest of cheese.
Bake 45–50 minutes until golden brown. Cool 15–20 minutes before serving.
Tips
Substitute ground lamb for some beef for richer flavor.
Adjust cinnamon to taste.
