Roasted carrot hummus is a sweet and creamy dip made from roasted carrots, chickpeas, tahini, garlic, lemon juice, and olive oil. It pairs well with pita bread and veggies. You can add spices for extra flavor and top it with olive oil and herbs.
Roasted Carrot Hummus
Ingredients
4 medium-sized carrots, peeled and cut into sticks
1 tablespoon olive oil
Salt and pepper, to taste
1 can (15 oz) chickpeas, drained and rinsed
1/4 cup tahini
2 tablespoons fresh lemon juice
2 cloves garlic, minced
1/2 teaspoon ground cumin
Water or vegetable stock as needed
Method
Preheat your oven to 400°F (200°C).
Place the carrot sticks on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper to taste.
Roast for about 20-25 minutes or until the carrots are tender and slightly caramelized. Let them cool slightly.
Combine the roasted carrots, chickpeas, tahini, lemon juice, garlic, and cumin in a food processor.
Blend until smooth, adding water or reserved liquid a tablespoon at a time until you reach your desired consistency.
Taste the hummus and adjust the seasoning with salt, pepper, or lemon juice as needed.
Transfer the hummus to a serving bowl. Drizzle with olive oil and sprinkle with paprika and chopped parsley if desired.
Enjoy with pita bread, veggie sticks, or as part of a mezze platter!
