Roasted Delicata Squash

Roasted Delicata Squash

Ingredients

  • 1 Delicata squash

  • ¼ cup dried cranberries

  • ¼ cup olive oil

  • 2 Tablespoons of honey or maple syrup

  • ¼ cup chopped walnuts

  • ¼ cup gorgonzola cheese

  • ¼ teaspoon black pepper

  • ¼ teaspoon kosher salt

  • ¼ teaspoon red pepper flakes

Method

  1. Preheat oven to 400 degrees.

  2. Wash the delicata squash well and cut off both ends. Cut the squash lengthwise and scoop out the seeds.  You can throw the seeds away or roast them too.

  3. Slice the delicata squash into ¼" slices and place in a large mixing bowl with cranberries.

  4. In a large bowl, add the delicata squash, olive oil, cranberries, walnuts, salt, pepper, and chili flakes, and mix well to cover all the squash

  5. Spread squash on a baking sheet.

  6. Roast in a 400-degree oven for 20 minutes until the squash is tender and slightly golden.

  7. Place the squash and cranberries into a serving dish and top with walnuts, gorgonzola cheese, and chopped green onions for the garnish.

  8. Drizzle with the honey or syrup and serve warm
