Creamy Pumpkin Soup


Ingredients:

• 3 Tablespoons Olive Oil

• 1 4-pound roasted pumpkin flesh

• 1 yellow onion-medium dice

• 1 Tablespoon minced garlic

• 1 Tablespoon minced ginger

• ½ teaspoon salt

• ½ teaspoon cinnamon

• ½ teaspoon nutmeg

• ½ teaspoon clove

• Dash black pepper

• ½ teaspoon cayenne pepper

• 4 cup chicken broth

• ½ cup heavy cream


Method

1. Heat a large stock pot to medium high

2. Add the oil and sauté the diced onions until fragrant

3. Add the garlic and ginger, and stir well

4. When the onions are translucent, add the pumpkin and stir well

5. Add the salt, pepper, cinnamon. nutmeg, clove, and cayenne and stir well

6. Add the chicken broth and incorporate.

7. Use a blender, food processor or juicer to puree the pumpkin mixture.

8. Add back to the stock pot and heat until hot, stirring the whole time.

9. Add the heavy cream

10. Garnish with roasted pumpkin seeds
