Creamy pumpkin soup is a comforting blend of pumpkin, cream, and spices like nutmeg, cinnamon, and ginger. It's perfect for chilly days and can be garnished with croutons, roasted pumpkin seeds, or a dollop of cream.
Creamy Pumpkin Soup
Ingredients:
3 Tablespoons olive oil
1 4-pound roasted pumpkin flesh
1 yellow onion, medium dice
1 Tablespoon minced garlic
1 Tablespoon minced ginger
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon clove
Dash black pepper
½ teaspoon cayenne pepper
4 cups chicken broth
½ cup heavy cream
Method
Heat a large stock pot to medium-high
Add the oil and sauté the diced onions until fragrant
Add the garlic and ginger, and stir well
When the onions are translucent, add the pumpkin and stir well
Add the salt, pepper, and cinnamon. nutmeg, clove, and cayenne, and stir well
Add the chicken broth and incorporate.
Use a blender, food processor, or juicer to puree the pumpkin mixture.
Add the mixture back to the stockpot and heat until hot, stirring continuously.
Add the heavy cream
Garnish with roasted pumpkin seeds.
