Roasted sweet potatoes are a tasty and easy-to-make treat. Cut the sweet potatoes into pieces, coat them with olive oil and fresh lemon juice, and season with your favorite herbs and spices.
Roasted Sweet Potatoes
Ingredients
2 large, sweet potatoes
2 Tablespoons of olive oil
Juice of one lemon
2 teaspoons granulated garlic
2 teaspoons granulated onion
2 teaspoons turmeric
Salt and pepper as needed
Fresh thyme for garnish
Method
Preheat your oven to 425°F (220°C).
Wash and peel the sweet potatoes. Cut them into exact sizes so they cook evenly.
In a large bowl, toss the cubed sweet potatoes with olive oil, lemon juice, and the seasonings until they are well coated.
Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper for easy cleanup.
Roast in the preheated oven for about 25-30 minutes or until the sweet potatoes are tender and slightly caramelized. Take a spatula and stir them halfway through cooking to ensure they brown evenly.
Tips:
For added flavor, feel free to experiment with spices like cinnamon or cayenne pepper.
