Roasted sweet potatoes are a tasty and easy-to-make treat. Cut the sweet potatoes into pieces, coat them with olive oil and fresh lemon juice, and season with your favorite herbs and spices.







Roasted Sweet Potatoes

Ingredients

  • 2 large, sweet potatoes

  • 2 Tablespoons of olive oil

  • Juice of one lemon

  • 2 teaspoons granulated garlic

  • 2 teaspoons granulated onion

  • 2 teaspoons turmeric

  • Salt and pepper as needed

  • Fresh thyme for garnish


Method

  1. Preheat your oven to 425°F (220°C).

  2. Wash and peel the sweet potatoes. Cut them into exact sizes so they cook evenly.

  3. In a large bowl, toss the cubed sweet potatoes with olive oil, lemon juice, and the seasonings until they are well coated.

  4. Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper for easy cleanup.

  5. Roast in the preheated oven for about 25-30 minutes or until the sweet potatoes are tender and slightly caramelized. Take a spatula and stir them halfway through cooking to ensure they brown evenly.

 

Tips:

  • For added flavor, feel free to experiment with spices like cinnamon or cayenne pepper.

  • Roasted sweet potatoes make a great side dish or can be added to salads and grain bowls for a delicious addition.
