Spicy Miso Pasta With Scallops and Shrimp

Ingredients

  • 4 cloves of garlic

  • ½ sizable yellow onion

  • 2 Tablespoons butter

  • 2 ½ Tablespoons sesame oil, divided

  • 1 Tablespoon sriracha

  • 1 ½ Tablespoons rice vinegar

  • 2 Tablespoons soy sauce

  • ½ teaspoon each salt and pepper

  • 1 cup water

  • 3 Tablespoons red miso paste

  • 5 ounces of white mushrooms

  • 1 package of pasta

  • ½ pound peeled and deveined shrimp

  • ½ pound bay scallops

  • 1 whole lemon for juice and zest





Method

  1. Cook the entire package of pasta, drain, and set aside

  2. Peel the onion and garlic, then add them to a food processor or blender along with half the sesame oil, sriracha, vinegar, soy sauce, salt, and pepper. Puree until smooth; add the water and puree again.

  3. Pour the sauce into a small saucepan and bring to a boil, then simmer for about 10 minutes, stirring occasionally as it simmers.

  4. In a large frying pan, add the remaining sesame oil and the butter and sauté the shrimp, scallops, and mushrooms until the scallops are firm and the shrimp are a light orange.

  5. While the seafood and mushrooms are sautéing, add the remaining water and the red miso paste to the blender and blend until smooth.

  6. Add the mixture to the simmering sauce, blend well with a small whisk, and simmer for about 20 minutes, reducing the mixture by half.

  7. Add the finished sauce to the seafood mixture and stir everything together. Cover and simmer for about 5 minutes.

  8. Add the cooked pasta to the mixture and cook for another 5 minutes

  9. Stir in the pasta, simmer for about a minute, then plate and serve
