Spinach Artichoke Dip Grilled Cheese Sandwich
Ingredients
1 cup thawed chopped spinach, drained
4 ounces cream cheese, softened.
½ cup grated Parmesan cheese
2 medium scallions, sliced
1 small jar of marinated artichoke hearts
1 Tablespoon lemon zest
1 teaspoon granulated garlic
Salt and pepper
2 Tablespoons mayonnaise
4 slices of Provolone cheese
4 slices of sourdough bread
Method
Combine the first seven ingredients in a bowl.
Assemble the sandwiches by spreading ½ Tablespoon of mayo onto each slice of bread. Place the bread, mayo side down, onto a hot pan or griddle. Add one slice of cheese, 1/2 cup of the cream cheese mixture, another slice of cheese, and a slice of the bread, mayo side up.
Grill each sandwich on both sides until golden brown, the filling is warm, and the cheese has melted, adjusting the heat as needed.
