Spinach Artichoke Dip Grilled Cheese Sandwich

Ingredients

  • 1 cup thawed chopped spinach, drained

  • 4 ounces cream cheese, softened.

  • ½ cup grated Parmesan cheese

  • 2 medium scallions, sliced

  • 1 small jar of marinated artichoke hearts

  • 1 Tablespoon lemon zest

  • 1 teaspoon granulated garlic

  • Salt and pepper

  • 2 Tablespoons mayonnaise

  • 4 slices of Provolone cheese

  • 4 slices of sourdough bread


Method

  1. Combine the first seven ingredients in a bowl.

  2. Assemble the sandwiches by spreading ½ Tablespoon of mayo onto each slice of bread. Place the bread, mayo side down, onto a hot pan or griddle. Add one slice of cheese, 1/2 cup of the cream cheese mixture, another slice of cheese, and a slice of the bread, mayo side up.

  3. Grill each sandwich on both sides until golden brown, the filling is warm, and the cheese has melted, adjusting the heat as needed.
