Spinach Artichoke Dip Grilled Cheese Sandwich
1 cup thawed chopped spinach, drained
4 ounces cream cheese, softened.
½ cup grated Parmesan cheese
2 medium scallions, sliced
1 small jar marinated artichoke hearts, diced
1 Tablespoon lemon zest
1 teaspoon granulated garlic
Salt and pepper
2 Tablespoon mayonnaise
4 slices Provolone cheese
4 slices sourdough bread
Combine the first seven ingredients in a bowl.
Assemble the sandwiches by spreading ½ Tablespoon of mayo onto each slice of bread. Place the bread mayo side down onto a hot pan or griddle, add 1 slice of cheese, 1/2 cup of the cream cheese mixture, another slice of cheese, and a slice of the bread, mayo side on top,
Grill each sandwich on each side until golden brown, and the filling is warm and the cheese melts, adjusting the heat as needed.
