Stir-fried Bok Choy

Ingredients

  • 1-pound bok choy

  • 2 Tablespoon soy sauce

  • 2 Tablespoons beef broth

  • 1 Tablespoon rice vinegar

  • 1 Tablespoon sesame oil-divided

  • 1 teaspoon honey

  • 1/8 teaspoon red chili flakes

  • 2 Tablespoon vegetable oil-divided

  • 1 Tablespoon minced garlic

  • 2 teaspoons minced ginger

  • ¼ cup sliced green onions

  • ¼ teaspoon sesame seeds


Method

  1. Rinse the bok choy with water. Dry with a paper towel. Cut in half lengthwise.

  2. Combine the soy sauce, broth, vinegar, two teaspoons of sesame oil, honey, and red chili flakes in a small bowl.

  3. Add one tablespoon of vegetable oil to a wok or skillet over high heat until it reaches the smoking point.

  4. Set the bok choy into the hot oil, cut side down, in a single layer. Cook until lightly browned, about 1 to 2 minutes. Flip the bok choy over and repeat the step. Transfer browned bok choy to a plate.

  5. Add one tablespoon of oil to the wok, then add garlic, ginger, and green onions. Stir-fry until fragrant.

  6. Add the soy sauce mixture to the wok and simmer until it has thickened.

  7. Add the bok choy back to the wok and stir-fry until the sauce coats the greens.

  8. Transfer to a platter and garnish with sesame seeds and the remaining sesame oil.
